Al Dente is a business born in lockdown, started by chef Andrea Vignali on his own kitchen bench at home.
Andrea, a visa holder from Italy, was granted no government support when stood down from his full-time job as a chef at one of Melbourne's institutional restaurants. He started selling his pasta on Instagram and was then put into contact with the team from Cookaborough, providing him a platform to sell his food releasing a weekly menu for both pick-up and delivery.
He soon enlisted the help of best friend Davide Bonadiman, another great Italian chef, stood down from his role at a Melbourne city restaurant. The pair have built their business from the ground up, and have recently acquired a bricks-and-mortar location for their restaurant in Carlton.
Through renovations and rebuilding, the pair have still been busy in the kitchen preparing their delicious handmade pasta, sauces, and desserts. Their most popular items, the Tortellini Cacio e Pepe, Lobster Ravioli with Prawn & Lobster Bisque, and Crab Ravioli with Lemon & Chilli Butter are now available at ST.
