LEGENDS

Each coffee presented in 'Legends' is the work of some of the figureheads of our industry. These are the movers and shakers that have been grabbing our attention with their focus on quality, exciting techniques and exceptional processing, ST. ALi has always tirelessly pursued quality in everything we do and these producers share our dogged determination. 



TASTING MENU


No list of legends would be complete without mention of Aida Batlle. Named as one of Time Magazine's 13 Gods of Foods, Aida Batlle is the epitome of perfection, her work shows the attention to detail found in Michelin Star restaurants. Aida will personally join us at ST. ALi House as a long time friend, and one of our key producers.

Hacienda Esmeralda needs little introduction as the original farm to produce fine Panama Gesha. Their coffee will sit alongside the work of Roberto Brenes, the creator of “Firestone” from his farm Auromar, multi award winning coffee that is truly the stuff of legend. Rounding out this collection is ST. ALi’s expression of the current talk of the town, El Diviso. This intensely aromatic coffee took out the top spot in both the Australian National Barista Cup and Brewers Cup competitions this year. 


All the coffee showcased in 'Legends' is an example of artisanal perfection from producers we would like to celebrate for their exceptional work. 


AUROMAR - Gesha Firestone BOP '22 Washed

This coffee is the stuff of legends. We have long been buying the magical coffee from Auromar (since 2014) but “Firestone” is something else and just as impressive as its grand title. We have been lucky enough to snag this lot before the famous Best of Panama auction where Firestone took the top prize in the washed Gesha category with a stand out score of 96! 


The coffee from this farm is stupid good anyway but with the extra care and attention they made something exceptional. Think about the best traditional Gesha you have ever had and multiply by 10. It takes time and care to make magic. Hand picked at perfect ripeness from optimum 10 year old trees, washed and processed immediately, wind dried for 18 days, sat in reposo for 101 days.

El Diviso - Aerobic AND Anaerobic Natural

Although not necessarily a global mover and shaker this coffee has come to everyone's attention in Australia of late and I think will be a coffee remembered for years to come in our community. Recently used to win both the Australian Brewers cup and the Australian Barista competition. We could not resist putting our own spin on this wild coffee. Once you taste it, it is easy to see why it got such high scores. It was a fun challenge roasting something so complex with so many different ways we could manipulate the flavours.


The very particular processing can be blamed for the complexity. Jose and his sons added 20% coffee cherry juice to the fermentation liquid and fermented it with intermittent agitation and condition changes for 80 hours. The result is a very intense and complex cup.

Hacienda La Esmeralda - Private Collection Gesha Washed 2019

Hacienda La Esmeralda needs little introduction. Located in the Boquete region of Panama, it is a multiple award winning and record breaking estate, world-renowned for introducing the Gesha coffee varietal to the world. Turning the world of coffee on its head in 2004 with their Best of Panama win with the first geisha to come into the limelight, Esmeralda has forever changed the coffee industry.


Within a few years of that win, Gesha was planted all over Panama and eventually began to be planted in Colombia, El Salvador, and Honduras. Coffee from this one little spindly coffee tree can fetch thousands of dollars per kilo and is revered all over the world as producing the pinnacle of coffee flavour.

Aida Batlle is a fifth-generation coffee producer operating her family’s three farms—Fincas Los Alpes, Kilimanjaro, and Mauritania— and a fourth farm of her own Finca Tanzania, all four in El Salvador’s Santa Ana region. Aida is known for her progressive and ground-breaking work delving into experimental processing techniques with her roaster partners and developing cascara


ABOUT RACHEL

Rachel Peterson and her family operate the world famous Hacienda La Esmeralda in Boquete, Panama. It was in 2004 at the Peterson’s Jaramillo Farm that the incredible rediscovery of Panamanian Gesha occurred. The Gesha variety from Hacienda La Esmeralda first competed and won in the Best of Panama in 2004, and continued to win for many years to come. The Petersons have led the way in promoting direct trade and hold their own online auctions each year where what many consider the world’s most delicious coffee is sold.
