Baccalà Mantecato means ‘creamed codfish’.

The process involves rehydrating the fish in running water for days, whilst removing the salt. This is an important part of the preparation. The codfish is then cooked in liquid with herbs and then processed with oil.

Historically, this food was eaten by sailors who spent months at sea. It was a practical product because it was preserved and had a long life. Much in keeping with this ethos, we have produced this product knowing that it has a good shelf life and will be a great addition to any table.
