Froot Loops + Hibiscus
One of our most loved varieties here at ST ALi roastery, Pink Bourbon, is exemplified in this semi-washed Colombian from Los Pinos and La Primavera farms in Huila region.
A long lost cousin of the renowned Gesha variety, Pinky B similarly exhibits delicate layered florals, complex fruits and a velvety body, with the addition of buttery moreish undertones: we fully swoon for it.
This coffee was lovingly created by two well known producer-farmers of Colombian quality coffees, Edier and Diego, who, like a Marvel super-squad of coffee people, have teamed up to make kick ass coffees. This Pink Bourbon was pre-fermented for 24 hours in its cherry, followed by 36 hours under anaerobic conditions, before washing and finally drying for 15 days on raised beds.
This coffee tastes fun. One of our roasters described it as, “Like eating a really, really expensive kouign-amann pastry”. Expect lively, bright notes of yuzu, sherbet and Froot Loops, with floral cherry blossom and hibiscus, and hints of caramelized sugar and butter bringing it together.
