Launching exclusively through our General Store, we have Tony Nicolini's (DOC fame) Italian Artisans pizza bases. Made from Tipo 00 flour, ancient grains, and a tiny amount of yeast fermented for 72 hours, these are 8.5" diameter pizzetta sizing, adorned with a simple Italian heirloom tomato sauce. Stunning and delicious.
It's not widely known that Tony Nicolini, the man behind Melbourne's DOC group of restaurants, sold his interests in the brand to launch Italian Artisans a couple of years ago. This has been a passion project focused on ingredients and vino produced by Italian artisans and of course, pizza made with ancient grains.
"I wanted to give other people the opportunity to peek into my pantry and be able to take those ingredients home, too," says Nicolini.
The bases are sold individually in 8.5" diameter pizzetta sizing, built from a combination of Tipo 00 flour and ancient grains, with the tiniest component of yeast and at least 72 hours of fermentation. This means that unlike other pre-packaged pizza bases, these bases are highly nutritious and easy to digest. They're adorned simply with a sauce made from highly prized Italian heirloom San Marzano tomatoes.
You can store the base in the fridge or freezer, and top simply with ingredients like Buffalo Mozzarella and Prosciutto, or Anchovies and Burrata.
However you serve it—it's gonna taste delicious.
