Gianduja is made by crushing organic Italian hazelnuts into a smooth paste, then combining with either silky organic dark or milk chocolate, before finishing off with whole hazelnuts. All Monsieur Truffe hazelnuts are from the Tonda Gentile Trilobato variety—these are especially valued and registered with the Italian Chamber of Commerce.
