Renowned for cultivating Arabica Selection 9 and Selection 5B, derived from a cross between Ethiopian Tafarikela and Hybrido-de-Timor, this coffee embodies the exceptional qualities of its Ethiopian lineage.
Handpicked carefully, each cherry undergoes meticulous sorting to eliminate defects, ensuring only the finest beans make the cut. To further refine quality, the cherries are floated in spring water, allowing underdeveloped beans to exit the scene gracefully. The sorted cherries then embark on a 72-hour fermentation journey in a purpose-built room, where temperature and pH levels are controlled, ensuring a consistent, outstanding cup profile.
Post-fermentation, the cherries bask in the sun on raised beds for 25-30 days. Inspired by African traditions, this unhurried drying process coaxes out moisture gradually, resulting in a cup marked by uniformity. The design of the raised beds, mirroring African style, not only aids efficient drainage but also fosters optimal airflow around the beans, contributing to an even drying process.
