There’s braised cabbage and bacon lardons (gotta pack in more pork!) along with potato salad, greens and garlic, honey-roasted carrots, with a fresh salsa verde to tie it all together.

Cooking Instructions:

Porchetta
Bring porchetta to room temperature while preheating an oven to 200°C. Cook for 1 hour and 30 mins or until internal temperature reaches 60°C, then allow to rest.

Blanched Green Beans/Garlic
Bring a pot of water to a simmer and drop the bagged greens in for 4 mins, or they can be eaten cold.

Potato Salad
Combine potato, mayonnaise, onion and parsley then mix and serve.

Braised Cabbage and Bacon Lardons
Bring a medium-sized pan to medium heat, put a drop of olive oil in and saute cabbage and lardons for 4 mins or until warm.

Honey Roasted Heirloom Carrots
Preheat oven to 180°C. Place carrots in the oven (in the tray they came in) for 6 mins.

Salsa Verde
Drizzle over pork and vegetables.

Use Ned’s baguette to make porchetta rolls with the leftovers (if there are any!)
