This coffee comes from Apolinar Arevalo from his farm in San Jose Lourdes, Cajamarca region of Peru. This will be our third year buying coffee from Apolinar. The second year of purchasing we visited him in 2018—where we were the first roaster to ever visit his farm. It’s a difficult trek, requiring a taxi up steep mountains, riding less than idea cable cars, and finally hiking steep terrain—with another hour and a half hike from his house to the actual farm.
Apolinar runs the farm with the help of his wife, family, and friends. Apolinar hails from the North near the Ecuadorian border and has lived and worked in this region his whole life. He’s also a founding producer member of the cooperative Lima Coffees, with his farm one of the highest in the region, at 2000 meters. He takes meticulous notes about his fermentation for each lot, but typically he picks his coffee selectively, depulps the same day, ferments it around 30 hours at the highest part of the farm, before drying it under solar covers for about 15 days. He is constantly working on fermentation experiments and his infrastructure in an attempt to improve quality and consistency. This shines through with this Yellow Caturra coffee, tasting of ripe honeydew melon with chocolate sweetness.
