The Tasmanian Honey Company prides itself on harvesting honey from the wild forests of Tasmania since 1978, using a cold-extraction method which ensures maximum flavour and health benefits remain in the final product, producing a cloudy, soft-candy-like texture with a rich mouthfeel.
We have three types to choose from:
MEADOW HONEY 350g
The Meadow honey comes from the open woodlands and pastures of northern Tasmania which yields a rich honey from clover, blackberry, thistle and many species of wildflower. The resulting honey is mild, subtle and delicate with a lingering, fresh flavour.
LEATHERWOOD HONEY 350g
Leatherwood honey itself is a true expression of the landscape. If you want to get nerdy about it, Tasmania, like the ancient rainforests, lie on 42 degree latitude south, which means the land is generally inhospitable. For a brief 6-8 weeks of the year, summer occurs in this area, allowing the Leatherwood tree to bloom with an abundance of white, delicate flowers with a fresh piquant scent, which translates into the final product. This example of leatherwood honey is buttery and spreadable- great for eating off the spoon or stirred into a Hot Toddy.
CHRISTMAS BUSH HONEY 350g
This honey is produced from the Bursia- a small, wiry tree that grows on the rocky hills of inland Tasmania, which erupts with millions of tiny, white flowers in the shape of a burning star over summer and has been given the name the Christmas Bush. Of all the Tasmanian Honey Company’s honeys, this is the richest and most complex of the lot, buttery and soft with mellow, marzipan undertones.
