THE BLEND

Notes shift with the season, from stone fruit to citrus to red apple, but the feeling stays the same. Clean, bright, and surprisingly versatile. As good in your morning flat white as it is black on a slow afternoon.

Feels Good is the most dynamic blend in the range. The fruit notes lead, clean, crisp and expressive, with a smooth caramel base that keeps it grounded and a black tea finish that adds length without bitterness. Right now it's red apple and maple syrup. Next season it might be something else. That's the point.

BEST SERVED

Espresso · Pour Over · Filter Machine

Feels Good is filter friendly and proud of it. Run it through a Moccamaster or pour-over and the fruit-forward character opens up beautifully. Pull it as a black espresso or long black and let the seasonal fruit notes speak for themselves. Additionally, Feels Good in a flat white or oat milk latte is a genuinely surprising and delicate experience.

BREW GUIDE & RECIPE

Dose: 20–25g · Yield: 46–52g · Time: 26–32 seconds

Grind: Fine

Feels Good rewards patience at the dial. Try pulling toward the longer end of the yield, 52g, for maximum clarity and brightness. The fruit notes are most expressive when the extraction is clean and the shot isn't rushed. If it tastes hollow or sour, tighten the grind and slow the extraction down. If it's flat and bitter, open up and speed it up slightly.

Grind: Medium-fine · Dose: 60g per litre · Water temp: 90-93 degrees


Lower water temperature than you might use for darker blends, this protects the delicate fruit notes from over-extraction. Pre-wet your filter paper and discard the rinse water. Bloom the coffee with twice its weight in water (about 30ml per 15g of coffee) for 30-45 seconds. Pour in slow, steady circles, keeping the water just covering the grounds. Total brew time: 3-4 minutes. Feels Good as a pour-over is exceptional, bright, clean and full of the seasonal fruit notes that make this blend unique.

Feels Good as a batch brew is one of the best things you can make on a Moccamaster. The filter brewing process highlights the clean, fruit-forward character of this blend in a way that espresso can't always achieve. Make a full pot, let it sit on the hotplate for no more than 20 minutes and drink it fresh.

Full cream dairy is the best match for Feels Good. Keeps the cup clean and lets the fruit notes come through without interference.

SOURCING

60% Colombia · 40% India

The Colombian component is a regional selection from the Andean highlands, a clean, sweet lot that provides the caramel structure underpinning the fruit notes. The Indian component, from the Chikmalagur region in Karnataka State, is part of ST. ALi's deliberate move toward sourcing closer to home, reducing carbon footprint while celebrating the quality coffee our region produces.

Both components are organic, not certified, but farmed and processed without synthetic inputs. Feels Good is ST. ALi's most values-aligned blend.
