MATCHA SYRUP:

60g Matcha powder
80g Sugar
500ml Hot Water

1. Combine 60g of matcha with 60g of sugar.
2. Add 500ml of hot water.
3. Blend everything together until smooth

STRAWBERRY MATCHA CLOUD:


40g Strawberry puree or syrup
60g Matcha Syrup
100g Milk
Cold milk foam (made using skim milk in a milkshake machine)
Freeze-dried strawberries and sea salt to garnish

1. Pour strawberry puree into the glass, filling the bottom layer
2. Mix 60g of matcha syrup with 100g of milk.
3. Stir well to combine and create a smooth. matcha milk mixture.
4. Pour the matcha milk into the glass over ice, filling up to about 3/4 full.
5. Top with Cold Milk Foam and garnish with crushed freeze-dried strawberries and a pinch of sea salt.
