This beautiful coffee from Sonora Estate is the variety Villa Sarchi, a mutation which naturally evolved from the popular Bourbon variety. It thrives in high altitudes under shade trees. These beans are a natural process, meaning whole coffee cherries are allowed to dry slowly in the sun before milling and processing, allowing for deep and complex fruit flavours to develop.
