THE BLEND

ST. ALi's most intense blend, dark and unapologetically bold. Built for short blacks and stovetops but powerful enough to cut through any amount of milk. Your 3pm reset. The traditional shot that still gets you off your seat.

TASTING NOTES

Dark Chocolate · Spice · Toasted Almond
Strength: ●●●●●●●

This is coffee that means business. The dark chocolate is deep and bittersweet, the spice adds warmth without heat, and the toasted almond rounds it into something that tastes refined rather than just roasted. Whether you pull it short or pour it long into milk, Italo Disco holds its ground.

BEST SERVED

Espresso · Stovetop

Short, dark and no compromise. Italo Disco was built for the espresso machine and the moka pot. Pull it tight as a short black or ristretto for the full Italian experience, or push it through milk for a cappuccino. The intensity and viscous body mean it cuts clean through any milk ratio, delivering a bold, dark cacao-like cup that holds its ground from piccolo to large latte. The shot that gets you off your seat.

BREW GUIDE & RECIPE

Dose: 20–25g · Yield: 46–52g · Time: 26–32 seconds

Grind: Fine

For a traditional Italian-style result, pull toward the shorter end, 46g yield in 26 seconds gives you a dense, intense shot with thick crema. If it tastes bitter or over-extracted, go slightly coarser or shorten the time.

Grind: Medium-fine

Fill the basket level, don't tamp · Low to medium heat

This is Italo Disco's spiritual home. Fill the bottom chamber with hot water before filling, pre-heating avoids scorching the coffee on a cold base. Fill the basket level without tamping. Set to low-medium heat and keep the lid open so you can watch it. The moment the coffee starts to emerge and you see the first dark drops, turn the heat down. Pull it off the moment it starts to sputter. Italo Disco from a moka pot is thick, intense and deeply satisfying, exactly what it was designed for.

Full cream dairy for maximum richness. The intensity and full body means Italo Disco holds up to any milk volume, from a short piccolo through to a large latte. The higher the milk ratio, the more the chocolate and spice notes come forward in a way that feels almost like a dark hot chocolate.

SOURCING

90% Brazil Arabica · 10% India Robusta

The Brazilian Arabica forms the foundation, deep, chocolatey and structured. The Indian Robusta contributes body, crema and the signature intensity that defines Italian-style espresso at its best. These are large regional lots selected for consistency and character, roasted to honour the tradition they're named after.
