Mr Ashok is a master of his craft with an impressive understanding of Indian terroir as well as modern coffee processing techniques. With world class processing facilities and a scientific approach, Mr Ashok has carefully developed processing and fermentation methods that result in bold, complex and interesting coffees.
This Catuai variety underwent an extended anaerobic fermentation of 96 hours with the addition of carbon dioxide, a process called carbonic maceration, before moving to raised beds for a 27 days drying period. The result is an impressively fruity cup with a thick, full body and notes of dried tropical fruit, vanilla, and an interesting hint of sweet, rich olive oil.
