This beautiful high-altitude washed Colombian comes to us care of industry darlings, producers Lohas Beans, whose offerings in recent years have been showcased numerous times on the national and international brewing and barista competition circuits. Known for their impeccable execution of traditional and experimental processing techniques, Lohas continue to impress with this year's Carambolo, giving us a bright, juicy and complex regional blend of varieties commonly grown in the Pitalito area, including Caturra, Bourbon Amarillo, Colombia.
After selective harvesting and hand sorting, these beans undergo a 24 hour oxidation stage before de-pulping, allowing cherries naturally occurring enzymes to enhance the mouthwatering aromatic compounds found in this cup. Once de-pulped, beans are fully washed in the traditional style of Colombia, leaving us with the clean, crisp profile we know and love.
This lot has notes of green apple, tropical fruit and lemongrass, balanced by a creamy body and silky mouthfeel.
