We've been working with Nicolas Fernandez and his La Maravilla (“The Wonder”) farm for a long time now, buying his full crop every year. This variety wasn't the first choice for many farmers, with Bourbon, Caturra, and Typica varietals difficult to grow with the threat of leaf rust ever-present in the area.
However, Nicolas has impressed us, yet again, with a delightful washed coffee. Its full bodied, jammy consistency is balanced with bright citrus, converting into an apple blossom and blackberries flavour note.
Honduras have shifted their reputation as a bulk commercial supplier into a powerhouse of high grade specialty over the last decade. They known for having a good balance of sweetness and coffee flavour in their beans, with 95% or more of farmers relying on family labour for all aspects of agricultural and harvest labour.
