Jhonatan Gasca and his brother Johan represent the fourth generation of a coffee-growing family in Pitalito, Huila, Colombia. What began as a traditional operation focused on quantity has transformed into a specialty coffee estate known for experimental processing and exceptional quality.

Their journey wasn't straightforward. Jhonatan initially dreamed of becoming a soccer player and moved to Cali with his brother, but financial difficulties brought them home. Encouraged by their mother to pursue education, Jhonatan studied ecological agriculture and livestock production. This decision would reshape their family's coffee legacy.

In 2008, Jhonatan, Johan, and their uncle began experimenting with specialty coffee on land their father had given them. Their first honey-processed coffee was rejected due to its appearance, but Jhonatan's commitment never wavered. Inspired by the success of friends like the Lasso family, the brothers pushed forward, driven by pride in their heritage and product.

Today, Finca Zarza is named both for the Gasca family and the blackberry bushes (zarza) adorning their land, symbolizing the interwoven strength of family and nature. Working alongside his wife Alejandra and their two sons, Jhonatan created seedbeds with new varieties. In 2022, varietals planted five years earlier began to shine, particularly their exceptional Pacamara.

This Pacamara, grown at their Bella Vista farm in Bruselas, gained international recognition when it was featured at the 2024 World Barista Championship. Processed using anaerobic natural fermentation with thermal shock, it delivers complex flavors while remaining gentle on the stomach. It stands as a testament to the brothers' dedication to both innovation and tradition as they pursue their goal of global recognition.
